  23. 1 cup toor dal
  24. 1/4 tsp Turmeric powder
  25. as needed Water
  26. 2 tsp Tamarind or tamarind chutney
  27. Pinch hing/asafoetida
  28. 1 tsp Red chilli powder
  29. 12 Tomatoes finely chopped
  30. 1 cup bottle guard chopped
  31. 1 cup onion chopped
  32. 1 tbsp Ginger garlic paste
  33. 2 tsp Sambhar masala
  34. 1 tsp Turmeric powder
  35. Appe
  36. 1 cup sooji
  37. 1/2 cup curd
  38. 1 chopped onion
  39. 1 chopped tomato
  40. 1 chopped capsicum
  41. to taste Salt
  42. 1 tsp Mustard seeds
  43. as needed Oil
  44. 1 tsp Red chilli powder
  45. Pinch baking soda
  46. Uttapam
  47. 2 cup sooji
  48. 1 cup curd
  49. as needed Water
  50. 1 chopped onion
  51. 1 chopped tomato
  52. 2 tsp Finely chopped coriander leaves
  53. to taste Salt
  54. Upma
  55. 1 cup sooji
  56. 3 cup water
  57. 1 chopped onion
  58. 1 chopped tomato
  59. 2 tsp Chopped coriander leaves
  60. to taste Salt
  61. 1 tbsp Roasted peanut
  62. 1 tbsp Lemon juice
  63. 1 tsp Red chilli powder

Instructions to make to make South Indian platter

  1. Idli -1 cup suji ;½ cup of curd ; ½cup water
    Mix all the ingredients and let sit for 20 min furthermore add 1 pack of eno fruit salt and mix it well the mixture turns frothy now add the mixture in the idli moulds and let cook on steam for 10 to 12 mins
  2. Dosa
    For dosa you need 2 cup of rice ½cup of urad dal 2 tbsp of chana dal
    Soak the ingredients overnight and add ¼ cup poha and grind the ingredients and leave for 8 to 10 hours your dosa batter is ready now adjust the consistency by adding water. Further more brush very little oil on tawa and spread the batter.

Medu Vada- 2 cups urad dal (husked & split black gram) 1 teaspoon cumin seed1 or 2 sprig curry leaves, chopped1 or 2 green chilies, chopped 1 tablespoon finely chopped ginger oil for deep frying wash dal for several times and soak for at least 5 to 6 hours and then add all the ingredients and grind them into paste add water if needed furthermore tale some paste in your hand...make sure to wet your hands with water before taking the paste now shape the paste like vada and deep fry in hot oil
  4. Appe - for alpe you need 1 cup suji and half cup curd and some chopped onions and tomatoes and green chillies, capsicum, coriander leaves and further add salt to taste and leave the batter aside for 20 mins further add pinch of baking soda and add tadka (for tadka take 1tbsp oil add 1 tsp of mustard seeds and 1/2 tsp of red chilli powder) add now mix well in appe batter and transfer it into appe pan cook on medium flame for 20 to 25 mins
  5. Sambhar -For sambar you need 1 cup of lauki 1 cup of chopped onions 1 cup chopped tomato
    Crushed ginger garlic
    2 tbsp of sambar masala
    2 tbsp of tamarind pulp
    Boil the pulses upto 4 whistles now in a pan add onions saute till pink texture now add 1 teaspoon of urad daal and add all the vegetables
    Furthermore add sambar masala salt to taste turmeric 1 tsp jaggery tamarind pulp cook for some time
  6. Uttapam - take 2 cups of suji 1 cup of curd mix them well and leave for 20 mins now add half cup of water or as required and make a thick consistency batter and add salt to taste furthermore chop some onions tomatoes, capsicum and coriander leaves and mix them together noe put the batter on pan and add these vegetables and let steam on medium flame for some time
  7. Upma - 1 cup suji and 3 cups of water some chopped green chillies,1 chopped Onion 1tbsp peanut 1 chopped tomato chopped coriander leaves salt to taste 1 tsp red pepper 1 tsp lemon juice add all the vegetables and cook for some time until golden brown further add peanuts and roasted suji and mix with vegetables and add water and mix thoroughly and cook on medium flame for 10 to 12 mins
