Ingredients and spices that need to be Make ready to make Chicken Pulao:

  1. 1/2 kg basmati rice soaked for 30 minutes
  2. 1 tsp oil
  3. 1 cup of yogurt,
  4. 1tsp garam masala (optional)
  5. Use the above masala for marinating the chicken pieces
  6. 1 tbsp Whole spice like cumin,
  7. 1 bay leaf,
  8. 1 inch cinnamon sticks,
  9. 4-5 cardamom pods
  10. 4-5 Cloves,
  11. 1 stoneflower,
  12. 2 jaiphal etc for taste & aroma
  13. 2 big onions,
  14. 4 slit green chillies,
  15. 2 tomatoes
  16. as required Coriander & mint leaves to garnish + vegetable stock
  17. as needed Green peas, carrot & French beans (optional)

Instructions to make to make Chicken Pulao

  1. Wash and soak rice for about 20 to 30 minutes. Drain off the water and set aside.
  2. Marinate the chicken with turmeric powder, chilli powder, salt,ginger garlic paste, 1tsp oil and then yogurt.You can also add a tsp of garam masala powder(optional).Yogurt is used to make the chicken tender.
  3. Marinate the chicken well & set it aside for a while.
  4. Pour oil or ghee preferably to a pressure cooker or a pot. When it turns hot, add dry whole spices including fennel powder. Saute till spices begin to sizzle.
  5. Add onions and fry until they become lightly golden brown.
  6. Saute the chicken on a medium flame
  7. Chicken should turn white in colour and partially soft cooked for about 3 to 4 minutes.Otherwise chicken may turn hard after adding tomatoes.
  8. Now add chopped tomatoes. Fry till the tomatoes turn mushy, soft and completely cooked.Now add vegetables like carrots,beans & peas.
  9. Add coriander and mint leaves. Stir and fry until the mixture begins to give a good aroma.
  10. Continue to cook till the moisture from tomatoes evaporate.
  11. Add vegetable stock or water. Add salt to taste.We have already added salt to marinate, take care not to add too much.
  12. When it comes to a boil. Add drained rice.
  13. Stir well. If cooking in a pot, then cover and cook on a lowe flame until the rice is done.
  14. If cooking in a cooker pressure, cover the lid and cook for 1 whistle on a medium heat.
  15. When the pressure releases,remove the lid and leave it for about 5 minutes. Fluff up gently.
  16. Serve chicken pulao with raita or side dish like chicken kheema pav as I've done.
