  15. 1/2 tsp mustard seeds
  16. 1/2 tsp cumin seeds
  17. 1/2 tsp turmeric powder
  18. Pinch asafoetida
  19. 1 tsp red chilli powder
  20. 1 tsp homemade kala masala
  21. 1 tsp homemade kanda lasun masala (onion garlic masala)
  22. 2 tbsp oil
  23. Salt as per taste
  24. Water as required
  25. For Masalabhat
  26. 21/2 cups Basmati rice
  27. 1 small cup fresh green peas
  28. 10/12 curry leaves
  29. 1/4 cup cashews
  30. 1 big tomato cut into lengthwise
  31. 5/6 garlic cloves
  32. 1 inch ginger
  33. 2 tbsp dry grated coconut
  34. 1 tsp red chilli powder
  35. 1 tsp homemade kala masala
  36. 1 tsp dhanya jeera powder
  37. 1/4 tsp garam masala
  38. 3 tbsp oil
  39. Salt as per taste
  40. 1 tsp sugar
  41. 6 cup boiled water
  42. For Koshimbir
  43. 1 small cup finely chopped onion
  44. 1 small cup finely chopped tomatoes
  45. 1 small cup finely chopped cucumbers
  46. 1/2 small cup roasted crushed peanuts
  47. 2 green chillies finely chopped
  48. 1 tsp sugar
  49. Salt as per taste
  50. Shrikhand
  51. 150 gms chakka (yoghurt)
  52. 150 gms sugar
  53. 1 tsp cardamom powder
  54. 1 tsp dry fruits powder

Steps to make to make Puri, batata rassa, Masalebhat, shrikhand & Koshimbir

  1. For puri
  2. Heat 2 tbsp oil in tadka pan.
  3. In a large mixing bowl add wheat flour, salt & hot oil, mix well.
  4. Add little water and knead the dough.
  5. The dough should not be soft but a little tight
  6. Divide the dough into small size balls
  7. Roll the dough ball evenly into circle using rolling pin
  8. Heat oil in a kadhai & deep fry one by one.
  9. For Batata rassa (potato curry)
  10. Rinse, peeled & chopped potatoes into small cubes.
  11. Grind garlic, ginger & dry coconut to a smooth paste.
  12. Heat 2 tbsp oil in a pan, add mustard seeds, let them crackle.
  13. Add cumin seeds, let them crackle.
  14. Add curry leaves, chopped onion. Saute until turns trasculent.
  15. Add chopped tomatoes & saute till the tomatoes soften.
  16. Add asafoetida, turmeric powder, chopped potatoes.
  17. Cover the pan with lid cook until potatoes are half cooked
  18. Add ginger garlic coconut paste, all masales & salt. mix well.
  19. Add water as per consistency of gravy & boil it on sim till it cooks well.
  20. For Masalebhat
  21. Clean and wash the rice, drain and keep aside
  22. Wash green peas also & keep aside
  23. In a mixer grind ginger garlic & coconut to a smooth paste.
  24. Heat oil in a pan, add mustard seeds, let them crackle.
  25. Add asafoetida, turmeric powder, curry leaves & green peas and mix well.
  26. Cover the pan with lid and cook until the peas soften.
  27. Add rice, all masales, salt and mix until the rice is well coated.
  28. Add 6 cups of boiled water.
  29. Add tomatoes, cashews & sugar.
  30. Cover the pan with lid & cook until rice is done.
  31. For Koshimbir
  32. In a large mixing bowl combine all ingredients together and mix well.
