- 1 sprig curry leaves
- pinch hing or asafoetida
- 1/4 cup Pomegrante seeds
- 1/2 tsp ginger minced or crushed
- 1 green or red chilli, slit
- 1/2 tsp cumin or jeera
- 1/2 tsp mustard
Instructions to make to make Curd rice
- Wash and soak rice for 20 to 30 minutes.
Add 1 & ½ cups water,salt to the pan, soft cook the rice.Fluff up the rice or mash lightly to suit your liking. Cool it completely. - Heat oil in a pan.
Add cumin and mustard. - When they begin to splutter, add split green chillies,ginger,dals and fry until golden.Add ginger, chilli and curry leaves.
When the curry leaves turn crisp, add hing. - Add grated coconut,roast for few seconds.Switch off the flame.
- Add yogurt to the rice. Mix pomegrante seeds,coriander leaves.
Pour the seasoning and mix. South indian style curd rice is ready. - Put the prepared rice in a square container and keep in refrigerator to get chilled.Transfer into a plate.Serve after garnishing with pomegrante seeds.
